This is really encouraging please keep up the good work of educating young women in Rwanda. I would like also to give a contribution through a public lecture to your students about leadership in the hospitality industry. I will really appreciate if given an opportunity. May God bless you and keep up the good work

It is immensely challenging to speak about nutrition when basic caloric needs are not being met. I think going to a grocery store would be overwhelming. I think this is a moment to step back and let them teach you what they eat. Understanding where you are starting is the most important thing. Who does the shopping or growing for their family. How many people eat together and when. Perhaps they could break into small groups and talk about it. They what is nutritious and caloric would be the key. Could you get a doctor to come in and talk about it who knows the culture and the situation that many of these girls are in?
Food is cultural. Food is crucial.

I think this is amazing. And to see these girls understanding and being in the situation of hospitality at work is great. What we take for granted about what they know about the work they might do is instructive....a napkin. Plates in a pile. Beds in a room without other things. And I love that they noticed that the gorilla did not say "Welcome to our forest." Perhaps they will have feedback about what the Gorilla treks could do to improve customer service. AND I dont know how many Rwandans have the opportunity to trek to see the gorillas, but I dont think very many and yet it is the gorilla's that draw so many tourists to their country.
A very exciting trip. Nicely recorded.

Dear Akilah,

I grow to love nutrition the more I realize we are truly what we eat. As a Jamaican in America its true that a lot of the fruits, vegetables and dishes are different or non existent. However, doing a cross cultural comparison can help the class understand to reduce the fried, packaged & processed foods, popular starches and increase the greens and colorful fruits and veggies in the area from the local & cheap market. Maybe even cooking/preparing something in class in the future would be fantastic.

The women may not be able to make drastic changes, but at least when they can, they will be equipped with the knowledge to do so.

It seems like an exchange of knowledge, which is awesome. Great job!

I'm touched by the ambition of these women. AKILAH teachers, staff, and founders should be so proud of the work they have done so far. I hope that someday I can be involved in this organization. The courage, love, and sense of community is palpable in this video. Thank you for sharing.

I have tears in my eyes - wonderful exercise, wonderful students and a brilliant teacher! To have these students articulate their hopes and dreams before an audience and a camera, no less, is a practical life lesson and a personal and spiritual gift to the participants and those who are lucky enough to see this video

I am the librarian at the same school as Sara Mehltretter.
As a teacher for over 29 years who hopes to change the world one student at a time, I have to say it is so wonderful to see how caring and hopeful each student is, you can feel their passion and that is so necessary for change to occur. I plan to show this to all my students in August and the teachers at my school as well in order to help them realize that we all have hopes and dreams and we all can make a difference. Congratulations on this assignment which will help instill confidence in all your students. I have written an email to Nicholas Kristof about the Institute I hope he will contact you soon. Elizabeth Dearborn Davis came to Tampa Catholic to share your good works with my students on May 13. She was very well received, we hope do more next fall.

Kelley,

Thanks for your thoughts. I think your idea is a fantastic one, especially because it would help our students connect this information about nutrition, which for many of them is new and abstract and hard to understand, to their own lives.

A friend here who works in nutrition also pointed out that a lot of the local produce in Rwanda - foods we've never heard of - is more nutritious (and cheaper!) than the more exotic imports - ie the vegetables we're used to. So a trip to the market would also allow us to consider the role of these local foods in an healthy diet here.

I'll keep you posted.

Hello Jonathan! I was reading your post and struck by the situation. It must be quite challenging to teach nutrition to those who may not even have adequate food to begin with.

The only thing that I thought of was that perhaps a trip to a local market or grocery store might be helpful. For the exercise, each student would get assigned a particular "budget" and would have to go "shopping," trying to find the most economical, healthy items to "purchase." The challenge would be to find the healthiest items for the cheapest price. All the budgets could be the same, or they could all be different to illustrate the differences between people in different economic situations. The students would not need to actually purchase the items to understand the concept. Budgets could be for just a single meal or for an entire week, depending on what you think would be best. This is just my crazy idea from an ocean away, but maybe it helps! Good luck with your class!
